Our recipe for this week comes from our lovely Olivey, Olive supplier, Olives et al. This is using a tapenade, which you will see in many of our hampers, which is made from olives, preserved lemons, capers and garlic and is gorgeous!
Baby Spinach Leaves
Make a deep cut into the length of the chicken fillets and open out.
Line with fresh spinach leaves then fill with a spoonful of Tapenade Provencal and a few Tomorrosso semi-dried cherry tomatoes.
Roll it all together then wrap in parma ham. Roast for 20 to 25 minutes.
